The holidays can be tough on the waistline, but a few simple choices can mean the difference between feeling good and the post holiday bloat. One healthful choice you can make for yourself and your family is to craft veggie-rich side dishes; like this recipe for sautéed Brussels sprouts with onions and herbs.
Bring a large pot of water to boil and add 2 1/2 pounds of Brussels sprouts, trimmed and quartered. Cook 3-5 minutes until the sprouts are barely tender, then drain.
Dice 1 large onion, then cook in a large, heavy pan with a drizzle of olive oil. Stir often until softened. Stir in 4 sprigs of thyme or savory, and top with salt and pepper to taste. Increase heat to medium high, add the Brussels sprouts, and cook until tender and warmed through. Remove herb sprigs and enjoy!
